Smoked Salmon & Spinach Crustless Quiche

This crustless salmon quiche is an easy low-carb dish full of flavour with sweet potato, spinach, dill, spring onions and cheese. Serve it for lunch or even dinner with a simple side salad.

Ingredients
  • 200g/7oz Smoked Salmon, roughly chopped
  • 2 Large Sweet Potatoes, thinly sliced
  • 150 150g/5.3oz Baby Spinach
  • 3 Spring Onions, sliced
  • 2 Cloves Garlic, minced
  • ½ Tsp Dill
  • 8 Eggs, room temperature
  • ½ Cup Double Cream (Heavy Cream)
  • 150g/5.3oz Shredded Cheddar Cheese
  • 50g/1.8oz Shredded Cheddar Cheese (topping)
  • Salt & Pepper
Method
  1. Heat a little olive oil in a skillet. Place the potatoes in a single layer, sprinkle with salt and pepper and cook for a few minutes on both sides. Add the garlic a minute before potatoes are ready. Remove and set aside.
  2. To the same pan, add the spinach and cook just until it wilts. Turn off heat and set aside.
  3. Butter grease a 28cm baking dish and place two layers of potatoes on top of each other. Top with spring onions, spinach and salmon, (leave a few veggies for on top at the last stage).
  4. Into a bowl, crack open all eggs, add the cream, season with salt and pepper and whisk together. Stir in the dill and cheddar cheese.
  5. Pour egg mixture over potatoes, scatter remaining veggies on top and a sprinkle of cheese.
  6. Bake in oven 180C/350F for 30-45 minutes until set and golden on top.
