Caprese Quiche

This delicious Italian-style caprese quiche is flavoured with a basil pastry crust, filled with creamy ricotta, mozzarella cheese and fresh tomatoes. This Caprese Quiche makes a great lunch, snack or dinner!

Method

Pastry:

  1. Butter grease a 27cm/10.5-inch springform tart pan. 

  2. In a food processor pulse and process the flour, butter and fresh basil together. 

  3. Add the egg and 1-2 tablespoons cold water to form the dough. Using your fingers press the pastry down and up the sides of your tart pan. 

  4. Prick the base with a fork and refrigerate for 30 minutes. 

  5. Bake blind in preheated oven 190C/375F covered with baking paper and filled with beans or rice for 15 minutes. 

  6. Remove baking paper with beans and bake for a further 15 minutes. 

  7. Remove and leave to cool completely before adding the filling.

Filling:

  1. In a bowl mix together, the eggs, ricotta, shredded mozzarella, double cream, salt and pepper together. 

  2. Pour over prepared crust. Top with halved cherry tomatoes and sprinkle with some fresh or dried thyme. 

  3. Bake in oven 190C/375F for approximately 1 hour, until filling is set and slightly browned on top.
