Zucchini Tart with Stracciatella & Almonds
Ingredients
Method
-
Preheat oven to 200C/400F.
-
Add the extra-virgin olive oil, balsamic vinegar and honey to your pie dish and mix well together with a pastry basting brush.
-
Scatter the flaked almonds on top all over the dish.
-
Stack the sliced zucchini over the almonds, slightly overlapping one another in a round pattern.
-
Sprinkle with garlic powder, thyme and season with salt and pepper.
-
Lightly grease the sides of the dish to prevent the pastry from sticking to the side as you will have to invert it once it is ready.
-
Lay the sheet of puff pastry over the top and fold the edges over. Press the pastry down so it touches the zucchini and with a fork poke holes in the pastry for air vents.
-
Place in oven and bake for about 35 minutes, until golden brown.
-
Remove from oven and let sit for 5 minutes.
-
Place a plate on top of the pie dish and turn over, so that zucchini is on top.
-
Spoon the stracciatella on top in the center.
-
Drizzle with extra-virgin olive oil and season with freshly ground pepper.
-
Enjoy!
Note
- Stracciatella is an Italian cheese made from mozzarella curds mixed with fresh cream. This cheese is basically the inside of a burrata. Stracciatella can be substituted with a burrata.
