Christmas Log

My Christmas Log is a lovely combination of crushed biscuits, mixed nuts, dried fruit, evaporated milk and covered in dark chocolate. It’s an ideal treat to have on hand when visitor’s come to visit, a delicious gift, enjoy it with some tea or coffee or serve it after your Christmas Dinner

Method

Christmas Log -

  1. In a large bowl, break the biscuits with your hands into small and larger pieces.
  2. Roughly chop the cherries, hazelnuts, dates, almonds and mix with biscuits.
  3. Add the Vermouth, almond essence and evaporated milk. Mix together with your hands, and form into 2 separate logs on a sheet of baking paper.

  4. Roll the paper tightly, close the edges and refrigerate overnight, 24 hours.

Chocolate Coating -

  1. Chop the chocolate into tiny pieces and melt in the microwave or bain-marie and cover the logs. Leave 2 minutes for the chocolate to set a little, then lightly run a fork over the chocolate to make it look like a log.
  2. Keep refrigerated and covered, either with clean baking paper or a cake top cover.
  3. Enjoy!
