Chicken Mango Lettuce Wraps

These lettuce wraps have the most tender chicken in a yoghurt curry sauce topped with diced mango and feta cheese. They are light and nourishing for an easy lunch or healthy dinner!

Ingredients - Serves 12 Wraps

Method

Chicken:

  1. Place the chicken breasts in a pan fully covered with water. Simmer covered for 45 minutes.

  2. When ready, turn off heat and let the chicken rest and cool in the water till you can touch it by hand, (cooking it this way makes the chicken moist and tender). 

  3. Chop into bite sized pieces and transfer to a bowl. If the chicken is still warm leave it cool completely covered before you mix in the sauce.

Dressing:

  1. In a small bowl mix the yoghurt, curry paste, mango chutney and chopped fresh mint. 

Assemble:

  1. Wash and pat dry lettuce leaves. Set aside. 

  2. Add the sauce to the chicken and mix through gently till well coated. 

  3. Spoon the chicken on top of the lettuce leaves. Top with diced mango and feta, season with freshly ground pepper and garnish with fresh chopped mint. 

  4. Enjoy!

Note

  • Chicken recipe can also be served on a bed of lettuce with extra side veggies.
