Method

Recipe:

  1. Combine the milk with the vinegar and leave for 5 minutes.

  2. Add in the oil, eggs, both sugars and stir well with a whisk to combine.

  3. Using a sieve over the mixture, add the flour, cocoa powder, baking powder and salt.

  4. Combine well using the hand whisk. Add in the boiling coffee and stir.

  5. Pour into a lined cake tin and cook in oven 180C/350F for about 1 hour or until a skewer is inserted and comes out clean.

  6. Leave to cool completely over a wire rack then pour the chocolate ganache all over.

  7. Leave to set and top with chopped roasted hazelnuts.

  8. It's delicious on its own but served with whipped fresh cream on the side just makes it more divine!

Chocolate Ganache

  1. Place the chopped chocolate in a medium bowl.

  2. Heat the cream in the microwave or in a small saucepan until it nearly comes to a boil.

  3. Pour over chocolate, then let it sit for 2 minutes until the chocolate has melted.

  4. Stir with a hand whisk until well combined and leave to cool so it will thicken before pouring over the cake.
