Crustless Bacon Spinach & Mushroom Quiche

An easy and quick way to prepare a quiche without having to make a pastry base...Yummy for Lunch Dinner or ANY time of day!

Ingredients

Method:

  1. Cook bacon and remove from pan.

  2. Add the onions and cook until slightly softened then add the mushrooms and thyme.

  3. Cook until mushrooms have softened then stir in the spinach and cook until just wilted.

  4. Remove from heat and transfer ¾ of the filling to a butter greased pie dish.

  5. Beat the eggs, cream salt and pepper together and stir in the cheddar cheese.

  6. Pour over the filling.

  7. With a fork just slightly move around so that the egg mixture went through.

  8. Scatter the remaining mushrooms, onions and bacon on top and bake in oven 180C/350F for approximately 45 minutes or until set and golden on top.

  9. Serve with potatoes of your choice or a light side salad.

  10. Enjoy!
