Halloween Jack O' Lantern Brownies
A fun Halloween treat for all the family to enjoy! Fudgy brownies are topped with a marshmallow and covered in chocolate. These brownies are amazingly delicious and make a pretty addition to a party plate or as a sweet treat after a nice meal with family or friends.

Preheat oven to 180C/350F.

Line an 8x8-inch square pan with foil or parchment paper, leaving an overhang on opposite sides to help remove the baked brownies from the pan.

In a large bowl, melt the butter in the microwave. Add the sugar and cocoa powder and stir vigorously until the sugar has dissolved, about 1 minute.

Add the eggs one at a time then vanilla and stir until you achieve a smooth and shiny batter.

Sift and fold in the flour just until combined, don't overmix the batter.

Spread batter in prepared pan and scatter chocolate chips on top.

Bake for 30 minutes. Remove from oven and allow to cool completely.

Slice brownies into 9 even squares and place on parchment paper not too close to each so that you can easily continue to decorate.
Topping:

Melt white chocolate in the microwave. Stir in the vegetable oil, then add the orange colouring as much needed until you achieve a good orange colour.

Use a toothpick to hold and dip the marshmallows into the chocolate. Do not shake off excess coating but quickly place on top of the brownie. If needed, drizzle a little more chocolate on the edge of the brownie to drizzle down on the side.

Let the chocolate set a little before placing a chocolate chip on top of the marshmallow, then allow the to set completely before pipping the faces.

In a small bowl, melt the dark chocolate. Using a piping bag with a tiny round tip, pipe chocolate lantern faces.
