Method

  1. Soak fruit in juice, brandy and orange zest for at least 2 hours or overnight.

  2. Heat oven to 150C/300F.

  3. Line the inside of a 20cm/8-inch springform pan with greaseproof paper.

  4. Sift together the flour and spices. Stir flour mixture through soaked fruit. Spoon into prepared cake tin, smooth top and decorate with pecans around the edges.

  5. Bake for 35-40 minutes.

  6. Leave to cool and brush the top with apricot jam (warm for a few seconds in the microwave so it will be spreadable).

  7. Enjoy!
