Maltese Christmas Log
Ingredients - 2 Logs
Method
Christmas Log -
-
In a large bowl, break the biscuits with your hands into small and larger pieces.
-
Roughly chop the cherries, hazelnuts, dates, almonds and mix with biscuits.
-
Add the Vermouth, almond essence and evaporated milk. Mix together with your hands, and form into 2 separate logs on a sheet of baking paper.
-
Roll the paper tightly, close the edges and refrigerate overnight, 24 hours.
Chocolate Coating -
-
Chop the chocolate into tiny pieces and melt in the microwave or bain-marie and cover the logs. Leave 2 minutes for the chocolate to set a little, then lightly run a fork over the chocolate to make it look like a log.
-
Keep refrigerated and covered, either with clean baking paper or a cake top cover.
-
Enjoy!
Note
Vermouth is an aromatized, fortified wine infused with herbs and spices, with the addition of a distilled spirit, grape or brandy.
