Marinated Chicken with Potatoes & Zucchini

A one pan meal with marinated chicken, potatoes and zucchini.

  1. Mix the first six marinade ingredients in a large bowl, then add the milk and continue to mix until well incorporated.

  2. Place and coat the chicken in the marinade. Cover with clingfilm and leave to rest in the refrigerator for a few hours; the longer the better.

  3. Prepare a large shallow baking dish with olive oil, make sure you have coated all the base well with oil.

  4. Scatter the sliced onions to cover all the base then add the sliced garlic. 

  5. Place the chicken drumsticks in the middle.

  6. To the same bowl add the sliced zucchini and potatoes and coat well with the marinade.

  7. Now place them on both sides of the chicken. Coat the top of the chicken in the dish with the remaining marinade.

  8. Place the one jalapeno on each side of the potatoes and fill in with halved cherry tomatoes. 

  9. Season with salt and pepper and bake in preheated oven 200C/400F top shelf for 45 minutes or until chicken is cooked through.

  • Piri Piri seasoning is a mixed seasoning with dried chillies, onions, garlic, orange and lemon peel, cumin, oregano, paprika and coriander. If you cannot find it, substitute with ½ teaspoon chilli flakes/seeds.
