Pepperoni Pizza Casserole

All the goodness of Pizza made into a low-carb casserole!

  1. Remove the casing from the sausage and crumble it.

  2. Cook the cauliflower but not completely. If the florets are big cut them in half otherwise leave them whole.

  3. Cook the sausage in a little olive oil, add the onions and mushrooms and saute until browned and everything is cooked through.

  4. Add the garlic and cook for 1 minute, until fragrant.

  5. Add the pasta sauce, season with 2 teaspoons of Italian seasoning, salt and pepper.

  6. Add the cauliflower and stir to combine. Remove from heat and transfer to a 9x13-inch baking dish.

  7. Sprinkle the top with shredded mozzarella and evenly place the sliced pepperoni and olives.

  8. Bake in preheated oven 190C/375F for 20 minutes, until cheese is melted and edges turn golden.

  9. Sprinkle with remaining Italian seasoning and serve with a green salad and garlic bread.
