Roasted Pork Belly Strips with Bell Peppers, Onions & Potatoes

Preheat oven to 180C/350F.

In a large bowl add the potatoes, season with salt and pepper and drizzle with olive oil. Stir through to coat the potatoes and place them in an oven dish.

Place the pork belly strips in a shallow dish and season them in this order; soy sauce, cajun seasoning, salt, pepper, a little olive oil and crushed garlic.

Once the pork has been coated with the marinade, place them on top of the potatoes and bake uncovered in the oven for 1½ hours.

Slice the bell peppers and onions and cook them with a little crushed garlic on low heat, which will take about 15 minutes.

When the potatoes are fully cooked and the pork is tender, remove from oven.

The juices from the pork will have leaked into the potatoes, giving them a nice flavour.

Toss the meat and potatoes around in the dish so they are coated with the juicy flavours.

Serve with bell peppers and onion mix on top of the pork and potatoes
