This Vegetable Galette is filled with sweet potato, butternut squash, beetroot, carrots, onions, garlic and blue cheese.

Method

Filling

  1. In a skillet, melt the butter. Add the chopped onions and garlic, cook until softened.

  2. Transfer the onions to a bowl, add the cream cheese, blue cheese, thyme, salt and pepper. Mix well and set aside.

  3. Open the store bought pastry and leave it on its own packaging paper.

  4. Spread the onion and cheese mixture on top of the dough, leaving a 2 inch border.

  5. Arrange the vegetable slices on top alternating with different colours. 

  6. Sprinkle sea salt and freshly ground pepper over the vegetables.

  7. Fold over the dough making pleats as you go around to close it.

  9. Brush the dough with egg wash and sprinkle sesame seeds on top.

  10. Bake in preheated oven 180C/350F for 1 hour or until vegetables are tender and the crust is golden brown.
