Method

  1. Butter grease a 28cm/11-inch springform tart pan and lay out the pastry.

  2. To get a nice top finish roll your rolling pin over the top edges to trim off the excess pastry.

  3. Refrigerate for 30 minutes before adding the sponge and jam.

  4. Spread a thin layer of jam, and cover it with a thin layer of sponge and the remaining jam.

  5. Make a lattice or any design with pastry and place it on top of the jam.

  6. Brush the pastry with beaten egg and bake in oven 180C/350F till pastry is cooked and golden on top.
