Zucchini Tart with Stracciatella & Almonds

This delicious Zucchini Tart is one those dishes that is incredibly easy to make but looks impressive. It makes a great dinner party appetizer, starter, snack or light lunch!

Ingredients

Method

  1. Preheat oven to 200C/400F.

  2. Add the extra-virgin olive oil, balsamic vinegar and honey to your pie dish and mix well together with a pastry basting brush. 

  3. Scatter the flaked almonds on top all over the dish. 

  4. Stack the sliced zucchini over the almonds, slightly overlapping one another in a round pattern. 

  5. Sprinkle with garlic powder, thyme and season with salt and pepper. 

  6. Lightly grease the sides of the dish to prevent the pastry from sticking to the side as you will have to invert it once it is ready. 

  7. Lay the sheet of puff pastry over the top and fold the edges over.  Press the pastry down so it touches the zucchini and with a fork poke holes in the pastry for air vents. 

  8. Place in oven and bake for about 35 minutes, until golden brown. 

  9. Remove from oven and let sit for 5 minutes. 

  10. Place a plate on top of the pie dish and turn over, so that zucchini is on top. 

  11. Spoon the stracciatella on top in the center. 

  12. Drizzle with extra-virgin olive oil and season with freshly ground pepper.

Note

  • Stracciatella is an Italian cheese made from mozzarella curds mixed with fresh cream. This cheese is basically the inside of a burrata. Stracciatella can be substituted with a burrata.
