Method

  1. In a large bowl, add the sliced apples, juice of a lemon, sugar, cinnamon and mix together.
  2. Join the 2 sheets of puff pastry on a sheet of baking paper.
  3. Spread 4 tablespoons of cherry jam in the middle lengthwise (the width of 2 sliced apples next to each other). Start an inch down from top and stop an inch before you reach the bottom.
  4. Lay 2 rows of sliced apples, overlapping each over the jam and top with chopped walnuts and sultanas.
  5. Fold over one side of the pastry to cover the apples (the right side). Trim excess pastry if needed. Press the top and bottom edges together.
  6. On the left side cut 12 strips, starting from the apples and fold them over the pastry covering the apples.
  7. Brush the pastry with egg wash. Place sliced apples overlapping all along the middle and sprinkle chopped walnuts on both sides.
  8. Bake in oven 180C/350F for 30-45 minutes, until pastry is golden.
  9. Remove from oven, let cool slightly and brush the top of apples and walnuts with warmed peach jam.
  10. Serve warm with vanilla ice-cream or whipped cream and enjoy!
