Caprese Roasted Asparagus

An easy twist on roasted asparagus, adding the flavours of caprese salad. Roast the tomatoes and asparagus, then top with mozzarella cheese, fresh basil and a drizzle of balsamic glaze. 

Makes an amazing side dish for any barbecue or dinner!

  1. Preheat oven 200C/400F.

  2. Arrange asparagus in a single row and cherry tomatoes cut side up on a large baking sheet. 

  3. Drizzle with olive oil and season with salt and pepper. 

  4. Roast in oven for 10 minutes, remove from oven and top asparagus with shredded mozzarella.

  5. Return to oven and continue roasting for 5 more minutes, until cheese melts. 

  6. Transfer asparagus to serving plates. Top with cherry tomatoes and fresh basil. Drizzle with Balsamic Glaze.
