Chicken Pasta Salad

A delicious mix of tender chicken, pasta, crisp vegetables, and a tangy dressing, perfect for a satisfying, refreshing meal.

Method

  1. Place chicken breast in pan of water cover and simmer for 45 minutes.

  2. Remove from heat and let it cool before cutting into cubes (cooking the breast this way makes it moist and tender).

  3. Prepare the dressing - mix all ingredients together except the sugar, stir it in last. 

  4. Add onions, peppers, celery and shredded carrot to dressing and put it in the fridge till you cook the pasta. This is important because the dressing makes the veggies crunchy like pickles.

  5. Cook pasta al dente, drain and leave to cool down completely, in between stir a few times so it doesn't stick together.

  6. Place pasta in a large dish, add chicken and mix through then stir in the dressing with vegetables and mix all together.

  7. Chill in the fridge before serving.

  8. Enjoy!

Note

  • Pasta salad can also be made without the chicken. I like to include it because it makes it more filling especially eaten as a snack or meal.
