Ingredients

Method

  1. Cook chicken, remove from pan and coat with 2 teaspoons basil pesto.

  2. Lay out the focaccia pastry in a round dish and leave it on its paper. I opened and flattened it more with my fingers.

  3. Brush the base with the melted garlic butter.

  4. Top with chicken, walnuts, mozzarella, sliced cherry tomatoes, grana padano and extra walnuts on top again.

  5. I brushed the pastry with a little olive oil and sprinkled some sesame seeds on top.

  6. Bake in oven 190C/375F for about 45 minutes or until pastry is cooked and golden on top.
