Guacamole Tortilla Cups

A super easy, healthy appetizer or snack that can be made in a flash. Vegan and FULL of flavour!

Ingredients

Method

  1. Preheat oven to 180C/350F.

  2. Spray a cupcake tin with cooking spray.

  3. Cut 4 (8 1/2cm) circles from each tortilla. Fill each cavity of your cupcake tin with a tortilla round.

  4. Press down from both sides to create a tortilla cup. 

  5. Bake for 10 minutes until lightly browned. Remove from oven and leave to cool for 5 minutes before removing from tin. 

  6. Cut open your avocados, remove the pits and filling. Put in a bowl and mash until smooth.

  7. Squeeze lime juice over the mashed avocado, add cumin, salt and pepper to taste.

  8. Mix together then add diced tomatoes and onions. Mix well.

  9. Right before you serve; using a teaspoon, fill each tortilla cup with guacamole. 

  10. Garnish with diced tomatoes, sweetcorn and freshly ground pepper.

  11. Serve fresh & Enjoy!
