Lemon Butter Chicken

  1. Preheat oven to 180C/350F.

  2. Pound the chicken breasts with a meat tenderizer until they are the same thickness. This also tenderizes the chicken. 

  3. In a bowl or container add the flour, garlic powder, Italian seasoning, salt and pepper. 

  4. Take each breast and coat with flour, making sure it's completely covered and shaking off any excess flour.

  5. Heat a little olive oil in a large skillet over medium heat. Place the breasts in the pan and brown on both sides. Transfer the chicken breasts to a baking dish. 

  6. To the same pan, over medium low heat adds the butter. When the butter melts, add the garlic, cook for 1 minute then add the lemon slices and juice.

  7. Cook for 3 minutes, flipping the lemon slices in the pan. Season with a little salt and pepper. 

  8. Remove from heat and pour over the chicken in the baking dish.

  9. Bake in preheated oven for about 15 to 20 minutes depending on the size and thickness of the chicken breasts.

  10. Remove from oven and garnish with fresh parsley and lemon slices.

  11. Serve immediately with your favourite veggies or a crispy salad for a lighter meal.
