Maltese Kusksu

Kusksu is one of Malta’s traditional most loved comfort foods.  A delicious heart-warming soup made with broad beans, veggies, pearl pasta, eggs and the popular Maltese cheeselets.

Method

  1. In a large soup pot, sauté the onions in 2 tablespoons butter. When they start to soften add the broad beans and stir through for about 1 minute.
  2. Add the crumbled chicken cubes, curry, mixed spice and tomato paste. Stir through then add the vegetables and season with pepper. Add 2 litres of water, stir everything together and simmer covered for about 30 minutes, until carrots and vegetables are nearly cooked. (You don't want to completely cook the vegetables as they will be too soft by the time the soup is ready).
  3. Uncover the pan, add the eggs and cook for about 5 minutes, or until cooked then add the maltese cheese lets and leave to cook for about 15 minutes.
  4. Add the kusksu/pasta and continue cooking until pasta is cooked al dente.
