Method

Creamy Spicy Mayo Vinaigrette:

  1. Mix all ingredients together, and set aside.

Pickled Onions:

  1. Mix all ingredients except the sliced onions in a small saucepan.

  2. Bring to boil for a few minutes stirring continuously.

  3. Turn off heat and stir in onions. Cover and leave to cool at room temperature.

Poke Bowl:

  1. Cook the rice according to package instructions. When ready strain and rinse under cold water. Divide into 2 bowl plates.

  2. Places veggies on top of rice around the bowl, leaving a whole in the middle for the chicken.

  3. Cook the chicken according to package instructions and place in the center of the veggies.

  4. Top with Sesame Seeds and drizzle with Mayo Sauce.

  5. Enjoy!
