Chicken Caesar Cutlet
A modern take on a chicken caesar salad and honestly the only way I want to be eating it now!

Method
Chicken -

Preheat oven to 220C/425F.

Place a wire rack on a baking sheet and spray with olive oil.

Butterfly cut each breast and slightly flatten with a meat mallet. Season chicken with salt and pepper.

Place the flour in a large shallow bowl. Beat the egg in a second shallow bowl. Stir together the panko breadcrumbs, normal breadcrumbs, Italian seasoning, chicken seasoning and parmesan cheese in a third shallow bowl.

Coat both sides of each chicken breast in flour, beaten egg and breadcrumbs. Place on prepared wire rack and spray the top of chicken breast with olive oil. Bake in oven, top shelf for 15-20 minutes.
Salad -

In a medium bowl, toss the lettuce, grana padano shavings and caesar dressing to taste.

Serve the salad on top of the chicken with a few cherry tomatoes and a squeeze of lemon.
