Crispy Sliced Roasted Potatoes

These Crispy Sliced Roast Potatoes are one of the best-roasted potatoes you can make! If you have never made them, then you’ve got to try these. I guarantee they will be your new favourite way to eat potatoes! They are incredibly easy to prepare and are a perfect side with almost any main dish.

  1. Wash and clean potatoes with skin on.

  2. Cook in a pan of boiling water but not completely as they will continue to cook in the oven. Drain, leave to cool till you can touch by hand and slice. 

  3. Grease your dish with 4 tablespoons of extra-virgin olive oil. 

  4. Layer the sliced potatoes into stacks, not too tight going in a circle. 

  5. Drizzle potatoes with melted butter, sprinkle with onion powder, garlic granules, drizzle of olive oil and season with salt and pepper. 

  6. Bake in hot oven, top shelf 200C/400F for about 1 hour, until potatoes are browned and crispy. 

  7. Remove from oven, garnish with fresh chopped parsley and serve.

  8. Enjoy!
